There is a clear correlation between high levels of customer satisfaction and high spend per customer. To close the book on the art of ambience, all I can say is, know your customer. They are the ones who determine what the right atmosphere is for your spaces. Conduct customer surveys, collect guest feedback, allow for suggestions, and be open and responsive. It will get you far. To deliver the perfect experience to everyone is practically impossible.
But that's ok, you're only interested in your defined target audience, and aim to please them. It's your mission to ensure the ambience leaves your guests feeling better when they leave, then when they arrived. Turning your customers into your biggest brand advocates or promoters.
